
Stuffed Pork Fillet
Serves 4. Prep time 15mins. Cooking Time
Ingredients
600g pork fillet
1 courgette (very finely chopped)
1 large leek (very finely chopped)
100g breadcrumbs
olive oil
salt & pepper
3 lengths of string
Method
•Heat a little olive oil in a pot and add the vegetables. Cook until soft
•Add the breadcrumbs and mix well
•Season with salt & pepper
•Add enough olive to make it all bind together
•Pre-heat oven to 180oC
•Slice the Pork Fillet lengthways down the middle. Do not cut through
•Stuff the fillet with the stuffing and fold tight. Tie with 3 lengths of string
•In a heavy based oven proof frying pan add a little olive oil
•Bring to medium heat and add the stuffed pork fillet. Fry for 4-5minutes until it is browned all over
•Transfer to the pre-heated oven and cook for 20-25minutes.
•Leave to rest for atleast 10minutes
Serve with mashed potatoes and vegetable ragout
