Roast Sea Bass with Parsley and Caper sauce
Serves 2. Prep Time. 10mins Cooking Time. 15mins
Ingredients
1pk sea bass fillets (280g)
salt & pepper
plain flour
olive oil
1 tsp fresh parsely (chopped)
1 tsp capers
2 anchovy fillets
1/2 clove garlic
1/2 tsp dijon mustard
1/2 tbsp lemon juice
Method
•Season the bass fillets and lightly dust in flour
•Heat a glub of olive oil in a non stick frying pan and add the bass fillets
•Cook for 4-5minutes on each side
•Meanwhile grind the parsley, capers, anchovies & garlic in a blender or mortar & pestal
•When mixed well add the mustard and lemon juice
•Check for seasoning
•Serve with new potatoes and a green salad
