Pan Fried Salmon on Soy Noodles

Serves 2

Ingredients 

For the salmon
1pk salmon fillets (400g)
4 tbsp sesame seeds (optional
vegetable oil


For the stir-fried noodles
200g rice noodles
vegetable oil
2 garlic cloves (finely chopped)
30g fresh ginger (finely chopped)
1 fresh red chilli (seeds removed, finely chopped)
2 tbsp soy sauce
2 tbsp sesame oil
2 tbsp fresh lime juice

Method

Score the skin of the salmon (and roll it in the sesame seeds to coat if using)
Heat the oil in a frying pan and fry the salmon on both sides until the skin is crisp and the fish is cooked through, about 3-4 minutes each side.
Soak the noodles in boiling water for 2-4 minutes, following pack instructions and drain
Heat the vegetable oil in a pan and gently fry the garlic, ginger and chilli for about 3-4 minutes
Add the cooked noodles and stir to heat through
Stir through the soy sauce, sesame oil and lime juice.
To serve, place a pile of the noodles on a serving plate and arrange the salmon on top, crisp skin-side up.
