Cooked Duck Breast

Duck Breasts

Duck Breasts are best served pink but can be cooked well done if you prefer.

Pre-heat oven to 200oC
Score each breast in a criss cross pattern through the skin into the fat and season to taste
Heat a large frying pan until its hot (no need for oil)
Place the breasts in the pan skin side down and cook for 4minutes until skin is crispy and golden brown
Transfer to a roasting tray, skin side up, and place in the oven
Cook for 9minutes for rare, 12minutes for medium or 14minutes for well done
Leave to rest
