Mussels

Mussels are live and any that aren't must be discarded.

Preparing

Rince mussels under cold water and remove any beards

Discard and opened mussels that don't close when firmly tapped

Basic Cooking with Mussels

There are many differents recipes for mussels. The basic way to cook them is to add them to a hot pot and add some white wine and stock. (Suitable if adding pre-cooked mussels to a paella, risotto or chowder)

 Heat the pan to a high heat high
 Add the mussels and a good glug of white wine. Boil for 1-2 minutes, uncovered.
 Pour in fish stock and cover the pan tightly with a lid. Continue to cook for 4-5 minutes, shaking the pan occasionally until the mussels have fully opened. (Discard any mussels that have not opened during cooking).
