
Chicken wrapped in Bacon with Home made Oven Chips

Ingredients
4 chicken fillets
8 rashers maple smoked bacon
100grm Philadelphia
20grm Sunblush tomatoes
1kg floury potatoes (peeled and diced into 2cm chunks)
2 sprigs rosemary (finely chopped)
2 cloves garlic (thinly sliced)
salt & pepper
olive oil
Method
• Pre-heat the Oven to 180oC
• Put the potatoes into a pot of cold water and bring to the boil. Boil for 3 minutes
• Drain Potatoes and leave for a few minutes to dry out
• Spread on a baking tray and sprinkle over Rosemary, Garlic and salt and pepper. Drizzle with Olive oil
• Set in the Oven
• Meanwhile make an incision along the length of the Chicken Fillet (Do not cut through)
• Stuff the incision you have made with the Philadelphia and Sunblush Tomatoes
• Take a rasher of Maplecure Bacon and cover the incision along the length of the fillet
• Take another rasher and wrap it the other way to create a cross shape
• Set in the oven
The Chips will take 45mins to cook and the Chicken 35mins
For an extra twist, swap the Philadelphia for Goats cheese or Brie if you wish!
