Chicken Fillet Wrapped in Bacon

 

Chicken wrapped in Bacon with Home made Oven Chips

Serves 4
Prep. Time 15mins
Cook Time 45mins

Ingredients

4 chicken fillets
8 rashers maple smoked bacon
100grm Philadelphia
20grm Sunblush tomatoes

1kg floury potatoes (peeled and diced into 2cm chunks)
2 sprigs rosemary (finely chopped)
2 cloves garlic (thinly sliced)
salt & pepper
olive oil


Method

 Pre-heat the Oven to 180oC
 Put the potatoes into a pot of cold water and bring to the boil. Boil for 3 minutes
 Drain Potatoes and leave for a few minutes to dry out
 Spread on a baking tray and sprinkle over Rosemary, Garlic and salt and pepper. Drizzle with Olive oil
 Set in the Oven
 Meanwhile make an incision along the length of the Chicken Fillet (Do not cut through)
 Stuff the incision you have made with the Philadelphia and Sunblush Tomatoes
 Take a rasher of Maplecure Bacon and cover the incision along the length of the fillet
 Take another rasher and wrap it the other way to create a cross shape
 Set in the oven

The Chips will take 45mins to cook and the Chicken 35mins

For an extra twist, swap the Philadelphia for Goats cheese or Brie if you wish!
