Chicken Pesto

 

Chicken Pesto

Serves 4.   Prep Time. 15minutes    Cooking Time. 10-15minutes

Ingredients

3 Chicken Fillets (sliced)
400g tagliatelle, tubes or twists (penne or fusilli)

PESTO

¼ clove garlic (crushed)
3 handfuls basil leaves
1 handfull pinenuts
1 handful parmesan (grated)
extra virgin olive oil
salt & pepper
small squeeze lemon (optional)

Method

Take a frying pan and add pinenuts until browned but not burnt (do not use any oil)
Remove pinenuts and allow to cool
Heat a little oil in the frying pan and add chicken until cooked. (about 10-15minutes depending on the size of slice)
Cook pasta into boiling water as per instructions on pack

Meanwhile blend all the pesto ingredients (including roasted pinenuts) in a blender or mortar and pestal
Add more oil as required
Season to taste
