Chicken Fajitas

Serves 4  
Prep. Time 10mins  
Cooking time. 35mins (including marinating time)

Ingredients

3 chicken fillets (cut into strips)
1 red pepper (cut into strips)
1 yellow peppers (cut into strips)
1 tsp garlic (crushed)
½ tsp chilli powder
½ tsp paprika
Salt & pepper
Olive oil
8 tortillas
Soured cream
Guacamole (see below or cheat and buy!)
Salsa (see below or cheat and buy!)

Method

Mix together spices & seasoning
Add to the chicken
Marinate for 30mins
Heat a wok or thick based frying pan
Add oil, then chicken
When chicken is half cooked add the peppers
Remove from heat & keep warm

Serve on warmed tortillas with guacamole, salsa & sour cream

Guacamole

2 med avocados
Juice of 1 lime
1 clove garlic
½ red chilli (finely chopped)
1 shallot (finely chopped)
2 ripe plum tomatoes (finely chopped) (optional)
Coriander leaves (optional)

Simply just mix together!

Salsa

2 tbsp olive oil
1 clove garlic (crushed)
100g/3½oz cherry tomatoes, chopped
½ red onion, finely chopped
squeeze lemon juice
pinch dried chilli flakes (optional)
1 tbsp basil leaves (finely chopped)
salt and freshly ground black pepper

Simply just mix together!
