Beef Fajitas

Serves 4  
Prep. Time 10mins  
Cooking time. 35mins (including marinating time)

Ingredients

600g Sirloin, Rump or fillet steak (cut into long thin strips)
1 red pepper (cut into strips)
2 yellow peppers (cut into strips)
1 tsp ground cumin
½ tsp med or hot chilli powder
½ tsp paprika
Salt & pepper
Olive oil
8 tortillas
Soured cream
Coriander leaves

Method

Mix together spices & seasoning
Add half to beef and half to peppers
Marinate for 30mins
Heat a wok or thick based frying pan
Add oil, then peppers and then beef for 2-3mins
Remove from heat & keep warm

Serve with guacamole, sour cream & coriander

Guacamole

2 med avocados
Juice of 1 lime
1 clove garlic
½ red chilli (finely chopped)
1 shallot (finely chopped)
2 ripe plum tomatoes (finely chopped) (optional)
Coriander leaves (optional)

Simply just mix together!
